Freeze Dried Mango Bread Recipe
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 3/4 cup cooking oil
- 1/2 tsp. salt
- 1 1/4 cups sugar
- 1 tsp. vanilla
- 3 eggs
- 2 pkg Fruitwell Freeze Dried Mangos
- 1/4 cup walnuts
- 1/2 cup coconut, shredded
Heat 1 cup water to slight boil and reduce heat to low. Stir in Freeze Dried Mangoes and let stand while you combine other ingredients.
Sift flour, salt, soda,and cinnamon together. Make a well in dry ingredients and add eggs, oil, vanilla, sugar, nuts, coconut and mangoes; mix well, put into 2 greased 8 x 4 x2 loaf pans. Let stand 20 minutes before baking at 350 degrees f for one hour.
Note: This makes 2 loaves. Serve warm with butter or Whipped Cream. It’s delicious plain - no frosting, but sometimes you can sift powdered sugar over the top of the cooled bread.
